Review: What a beauty! This is what Ginjo saké aspires to be; well, they should at least try. With its explosive nose of over-ripe cantaloupe, wild cherries & white chocolate this medium to heavy bodied saké keeps on revealing more and more as it opens- especially some creamy lactic acid notes and almost green, grassy notes. The color would indicate some aging, which has benefited this saké greatly, mellowing the harsh acidity of youth, which you won’t find here. The mouth-feel is full with a rich, creamy character that emphasizes the natural sweetness in the brew, but this is hardly a syrupy, cloying saké. Further, unlike the multitude to overly fruit and floral Ginjo saké, this one offers the necessary structure to pair delightfully with some chow.
